Chicken and Gnocchi with Spinach, Artichokes, and Sun-Dried Tomatoes

Ingredients

  • 2 chicken breasts, cut into bite-sized pieces
  • 1 package (16 oz) potato gnocchi
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 cup marinated artichoke hearts, drained and chopped
  • ½ cup sun-dried tomatoes, sliced
  • 3 cups fresh spinach leaves
  • 1 cup chicken broth
  • 1 cup heavy cream (or see dairy-free option below)
  • ½ cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • Salt and black pepper, to taste

Directions

  1. Cook the Chicken
    Heat olive oil in a large skillet over medium heat. Add chicken pieces, season with salt and pepper, and cook until golden brown and cooked through. Remove and set aside.

 

  1. Sauté Aromatics
    In the same skillet, add garlic and cook until fragrant. Stir in sun-dried tomatoes and artichokes, cooking for 2–3 minutes.

  1. Make the Sauce
    Pour in chicken broth and cream. Stir in Italian seasoning and Parmesan, simmering gently until the sauce thickens.
  2. Cook the Gnocchi
    Add gnocchi directly to the sauce and cook for 3–4 minutes, stirring occasionally, until tender and coated.

  1. Add Spinach and Chicken
    Stir in spinach until just wilted. Return the chicken to the skillet and toss everything together. Adjust seasoning if needed.
  2. Serve
    Spoon into bowls and garnish with extra Parmesan or fresh herbs if desired.
