Green Beans with Pine Nuts, Parmesan, and Lemon

A fresh, crisp side dish that’s as simple as it is flavorful. Tender green beans are tossed with toasted pine nuts, a sprinkle of Parmesan, and a squeeze of lemon for brightness. Perfect for weeknight dinners, holiday tables, or summer cookouts.

Ingredients

  • 1 lb fresh green beans, trimmed
  • 2 tablespoons olive oil
  • ¼ cup pine nuts
  • ¼ cup grated Parmesan cheese
  • 1–2 tablespoons fresh lemon juice (to taste)
  • ½ teaspoon lemon zest
  • Salt & black pepper, to taste

Instructions

  1. Blanch the Beans
    Bring a large pot of salted water to a boil. Add green beans and cook for 3–4 minutes until crisp-tender. Drain and transfer to an ice bath to stop cooking. Pat dry.
  2. Toast the Pine Nuts
    In a large skillet, heat 2 tablespoons olive oil over medium heat. Add pine nuts and toast for 2–3 minutes, stirring often, until golden and fragrant. Remove and set aside.
  3. Combine & Toss
    Add the blanched green beans to the skillet (with remaining oil). Warm for 1–2 minutes, then add pine nuts, Parmesan, lemon juice, and zest. Toss to coat evenly.
  4. Season & Serve
    Season with salt and pepper to taste. Serve warm or at room temperature.
