2 tbsp olive oil
2 boneless skinless chicken breasts (diced)
Salt & pepper, to taste
1 tsp Italian seasoning
4 garlic cloves, minced
1/2 cup sun-dried tomatoes (drained & chopped)
3 cups chicken broth
1 cup heavy cream
250g (about 8 oz) penne or short pasta
2 cups fresh spinach
1/2 cup grated Parmesan cheese
Optional: fresh basil, chili flakes
Instructions:
Cook Chicken
In a large pot, heat olive oil over medium-high. Add diced chicken, season with salt, pepper, and Italian seasoning. Cook until browned and no longer pink. Remove and set aside.
Aromatics
In the same pot, sauté garlic and sun-dried tomatoes for 1 minute.
Build the Base
Add chicken broth, cream, and uncooked pasta. Stir well. Bring to a boil, then lower heat and simmer (covered) for 10–12 minutes, stirring occasionally, until pasta is cooked and sauce thickens.
Finish It Off
Add spinach, cooked chicken, and Parmesan. Stir until spinach wilts and everything is creamy and combined.
