Double Smash Burger with Caramelized Onions & Secret Sauce

Crispy-edged patties, gooey cheese, buttery brioche buns… this double smash burger hits all the right notes. A street-food classic, leveled up with rich caramelized onions and a bold, tangy secret sauce. It’s indulgence, perfected.

Ingredients (Serves 2 burgers):

For the Burger:

  • 300g ground beef (80/20 blend)
  • 2 brioche burger buns
  • 4 slices aged cheddar
  • 1 yellow onion, thinly sliced
  • 1 tbsp butter
  • 1 tbsp vegetable oil
  • Salt & freshly cracked black pepper

For the Secret Sauce:

  • 2 tbsp mayo
  • 1 tbsp ketchup
  • 1 tsp yellow mustard
  • 1 tsp finely chopped pickles
  • Pinch of sweet paprika

Instructions:

1️⃣ Caramelize the Onions:
In a skillet, melt butter over low heat. Add sliced onions and cook slowly, stirring often, for 15–20 minutes until deep golden and soft. Set aside.

2️⃣ Mix the Secret Sauce:
Combine mayo, ketchup, mustard, pickles, and paprika in a small bowl. Chill until ready to use.

3️⃣ Smash the Patties:
Divide the ground beef into 4 loose balls (don’t compact too much). Heat a cast-iron skillet over high heat until smoking.
Add beef balls and immediately smash flat using a heavy spatula or burger press. Season with salt and pepper.
Cook for 1–2 minutes per side, or until deeply browned and crispy. Add a slice of cheese on each patty during the last 30 seconds to melt.

Toast & Assemble:
Toast buns in the skillet or oven. Spread sauce on both buns, stack two cheesy patties per burger with caramelized onions layered in between. Top with the bun and devour!

Chef’s Tip:

Don’t press the patties after the first smash! Let the crust form and juices stay locked in.

Serving Ideas:

Pair with crinkle fries, garlic aioli, or a crisp coleslaw for that classic diner experience. Add a fried egg or jalapeños for a wild twist!
