Instructions
- Marinate the shrimp
Pat the shrimp dry and place them in a bowl. Add olive oil, garlic, smoked paprika, red pepper flakes, lime juice, salt, and pepper. Toss to coat and marinate for 10–15 minutes. - Prepare the chimichurri
In a bowl, combine parsley, cilantro, oregano, garlic, and red pepper flakes. Stir in red wine vinegar and olive oil. Mix well and season with salt and pepper. Let sit to allow flavors to develop. - Cook the shrimp
Heat a large skillet over medium-high heat. Add shrimp in a single layer. Cook for 2–3 minutes per side until pink, opaque, and lightly caramelized. Do not overcook. - Finish and serve
Remove shrimp from heat. Spoon chimichurri over the top and serve immediately with extra sauce if desired.
