- 8 corn or flour tortillas (if using flour, warm slightly so they roll easily)
- 2 1/2 cups shredded Mexican-blend cheese, divided
- Salt and black pepper, to taste

How to Make Easy Chicken Enchiladas
- Prep oven. Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
- Mix filling. In a bowl, combine shredded chicken, 1/2 cup enchilada sauce, 1 cup cheese, salt, and pepper.
- Assemble tortillas. Spoon chicken mixture down the center of each tortilla. Roll up and place seam-side down in the baking dish.
