Stuffed Pepper Soup

All the hearty comfort of classic stuffed peppers, but in a warm and cozy soup bowl. Perfect for a family dinner on chilly nights!

Ingredients

  • 3 large bell peppers (any color), diced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 lb ground beef (or turkey)
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 4 cups beef broth
  • 1 cup uncooked rice
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • 1 cup shredded cheese (optional, for topping)

Directions

  1. Cook the Meat
    In a large pot, cook ground beef (or turkey) over medium heat until browned. Drain excess fat.
  2. Add Veggies & Garlic
    Stir in diced bell peppers, onion, and garlic. Cook for 5 minutes until softened.
  3. Add Liquids & Seasoning
    Pour in diced tomatoes (with juice), beef broth, Italian seasoning, salt, and pepper. Stir well.
  4. Cook the Rice
    Add uncooked rice, bring soup to a boil, then reduce to a simmer. Cover and cook for 20–25 minutes, until rice is tender.
  5. Serve & Garnish
    Ladle into bowls and top with shredded cheese if desired. Serve hot.
