Ingredients
- 3 large bell peppers (any color), diced
- 1 onion, diced
- 2 cloves garlic, minced
- 1 lb ground beef (or turkey)
- 1 can (14.5 oz) diced tomatoes, undrained
- 4 cups beef broth
- 1 cup uncooked rice
- 1 teaspoon Italian seasoning
- Salt and pepper, to taste
- 1 cup shredded cheese (optional, for topping)
Directions
- Cook the Meat
In a large pot, cook ground beef (or turkey) over medium heat until browned. Drain excess fat. - Add Veggies & Garlic
Stir in diced bell peppers, onion, and garlic. Cook for 5 minutes until softened. - Add Liquids & Seasoning
Pour in diced tomatoes (with juice), beef broth, Italian seasoning, salt, and pepper. Stir well. - Cook the Rice
Add uncooked rice, bring soup to a boil, then reduce to a simmer. Cover and cook for 20–25 minutes, until rice is tender. - Serve & Garnish
Ladle into bowls and top with shredded cheese if desired. Serve hot.
