Ingredients

  • 1 lb ground turkey
  • 2 medium zucchinis, sliced into half-moons
  • 1 tbsp olive oil
  • ½ medium onion, chopped
  • 2 garlic cloves, minced
  • 1 tsp dried oregano
  • ½ tsp salt
  • ¼ tsp black pepper
  • ¼ tsp red pepper flakes (optional for heat)
  • ¼ cup chicken broth
  • ¼ cup grated Parmesan cheese

Instructions

  1. Cook the Turkey
    Heat olive oil in a large skillet over medium heat. Add ground turkey and cook, breaking it apart with a spoon, until browned and cooked through (5–6 minutes).
  2. Add Aromatics
    Stir in onion and garlic, cooking for 2–3 minutes until softened and fragrant.
  3. Season & Simmer
    Add oregano, salt, black pepper, and red pepper flakes. Stir in zucchini and cook for 4–5 minutes until just tender.
  4. Add Broth & Finish
    Pour in chicken broth and simmer for 2 minutes, allowing flavors to meld. Sprinkle Parmesan over the top, stir gently, and serve.
