Ingredients
- 1 lb fresh green beans, trimmed
- 2 tablespoons olive oil
- ¼ cup pine nuts
- ¼ cup grated Parmesan cheese
- 1–2 tablespoons fresh lemon juice (to taste)
- ½ teaspoon lemon zest
- Salt & black pepper, to taste
Instructions
- Blanch the Beans
Bring a large pot of salted water to a boil. Add green beans and cook for 3–4 minutes until crisp-tender. Drain and transfer to an ice bath to stop cooking. Pat dry. - Toast the Pine Nuts
In a large skillet, heat 2 tablespoons olive oil over medium heat. Add pine nuts and toast for 2–3 minutes, stirring often, until golden and fragrant. Remove and set aside. - Combine & Toss
Add the blanched green beans to the skillet (with remaining oil). Warm for 1–2 minutes, then add pine nuts, Parmesan, lemon juice, and zest. Toss to coat evenly. - Season & Serve
Season with salt and pepper to taste. Serve warm or at room temperature.
