Ingredients
- 2 cups graham cracker crumbs (about 14 crackers)
- 1/2 cup unsalted butter, melted
- 3 (8 oz) packages cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 tsp vanilla extract
- 1/2 cup sour cream
- 1 cup caramel sauce, divided
- 1 cup semi-sweet chocolate chips, melted
- 1 1/2 cups pecans, toasted and chopped
Instructions
- Make the crust:
- Preheat oven to 325°F (160°C).
- Mix graham cracker crumbs and melted butter until combined.
- Press firmly into a greased 9-inch springform pan. Set aside.
- Prepare the cheesecake batter:
- In a large bowl, beat cream cheese and sugar until smooth.
- Add eggs one at a time, mixing well after each.
- Mix in vanilla and sour cream until creamy.
- Assemble layers:
- Pour half the batter into the crust.
- Drizzle with 1/2 cup caramel and sprinkle 1/2 cup pecans.
- Pour remaining batter over the top.
- Bake:
- Place the pan on a baking sheet and bake for 55–65 minutes, until center is set but slightly jiggly.
- Turn off oven, crack door slightly, and let cheesecake cool inside for 1 hour.
- Chill & decorate:
- Refrigerate at least 4 hours or overnight.
- Before serving, drizzle with melted chocolate and remaining caramel.
- Sprinkle with remaining pecans.
