Ingredients

  • 2 cups graham cracker crumbs (about 14 crackers)
  • 1/2 cup unsalted butter, melted
  • 3 (8 oz) packages cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup sour cream
  • 1 cup caramel sauce, divided
  • 1 cup semi-sweet chocolate chips, melted
  • 1 1/2 cups pecans, toasted and chopped

Instructions

  1. Make the crust:
    • Preheat oven to 325°F (160°C).
    • Mix graham cracker crumbs and melted butter until combined.
    • Press firmly into a greased 9-inch springform pan. Set aside.
  2. Prepare the cheesecake batter:
    • In a large bowl, beat cream cheese and sugar until smooth.
    • Add eggs one at a time, mixing well after each.
    • Mix in vanilla and sour cream until creamy.
  3. Assemble layers:
    • Pour half the batter into the crust.
    • Drizzle with 1/2 cup caramel and sprinkle 1/2 cup pecans.
    • Pour remaining batter over the top.
  4. Bake:
    • Place the pan on a baking sheet and bake for 55–65 minutes, until center is set but slightly jiggly.
    • Turn off oven, crack door slightly, and let cheesecake cool inside for 1 hour.
  5. Chill & decorate:
    • Refrigerate at least 4 hours or overnight.
    • Before serving, drizzle with melted chocolate and remaining caramel.
    • Sprinkle with remaining pecans.
