Ingredients

For the Salad:

  • 8 oz spaghetti (or pasta of choice), cooked and cooled
  • 1 cup cherry or grape tomatoes, halved
  • 1 cup cucumber, sliced or diced
  • ½ cup black olives, sliced
  • ½ cup green olives, sliced
  • ¼ cup red onion, thinly sliced
  • ½ cup feta cheese, crumbled

For the Homemade Italian Dressing:

  • ¼ cup extra virgin olive oil
  • 2 tablespoons freshly squeezed lemon juice
  • 1 tablespoon honey (optional, for balance)
  • 1 teaspoon Italian seasoning
  • Salt & black pepper, to taste

Instructions

  1. Cook the Pasta:
    Cook spaghetti according to package instructions. Drain and rinse under cold water. Set aside.
  2. Make the Dressing:
    In a jar or bowl, whisk together olive oil, lemon juice, honey, Italian seasoning, salt, and pepper until emulsified.
  3. Prepare the Veggies:
    In a large mixing bowl, combine tomatoes, cucumbers, olives, and red onion.
  4. Assemble the Salad:
    Add the cooled spaghetti and feta cheese to the veggie mix. Pour in the dressing and toss everything together until well coated.
