Ingredients
2 cups all-purpose or gluten-free flour
1/3 cup granulated sugar
1/2 tsp salt
1 tbsp baking powder
1/2 cup (1 stick) unsalted butter, grated & very cold (or frozen)
1/2 cup buttermilk or cream (plus more for brushing)
1 large egg
2 tsp vanilla extract
1 cup fresh or frozen blueberries
Directions
In a large bowl, whisk together the flour, sugar, salt, and baking powder.
Using a pastry blender or your hands, cut in the butter until the mixture is crumbly.
In a small bowl, whisk together the egg, buttermilk (or cream), and vanilla extract
Add the wet ingredients and blueberries to the dry ingredients. Gently stir until the dough just comes together ā do not overmix.
Lightly flour a piece of parchment paper or your counter. Press the dough into an 8-inch circle, about 3/4 inch thick.
Brush the top with additional buttermilk or cream and sprinkle with sugar.
Using a sharp knife, cut the circle into 8 wedges. Place the wedges onto a parchment-lined baking sheet, leaving space between each.
Chill the scones in the fridge for 15ā30 minutes ā this is important for helping them hold their shape and bake up flaky.
While chilling, preheat the oven to 400°F (200°C).
Bake for 20ā25 minutes, until golden brown.
Cool slightly before glazing.
To make the glaze:
In a small bowl, whisk together powdered sugar, milk, and vanilla until smooth. Add more milk if needed to reach a drizzle consistency. Drizzle over cooled scones.
