Ingredients

For Each Packet (Serves 1–2):

  • 6 oz steak (sirloin, ribeye, or tenderloin), cut into large cubes or strips
  • 1 medium Yukon gold or red potato, thinly sliced
  • 1 tablespoon butter, melted
  • 1 garlic clove, minced
  • 1/2 teaspoon dried rosemary (or thyme)
  • Salt & black pepper, to taste
  • 1 teaspoon olive oil
  • Optional: red pepper flakes or smoked paprika for extra flavor

Instructions

  1. Prep the Foil Packets
    Cut heavy-duty aluminum foil into 12–14 inch sheets. Lightly grease the center with olive oil or nonstick spray.
  2. Season Everything
    In a bowl, toss the steak pieces with garlic, rosemary, salt, pepper, and a drizzle of olive oil.
    In a separate bowl, toss the sliced potatoes with butter, salt, and pepper.
  3. Assemble Packets
    Layer the seasoned potatoes in the center of the foil. Top with the marinated steak pieces. Drizzle any remaining butter or marinade over the top.
  4. Seal
    Fold the foil into a packet by bringing two long sides together and folding down tightly, then folding in the ends to seal.
  5. Cook
  • Oven: Bake at 425°F (220°C) for 20–25 minutes.
  • Grill: Grill over medium heat for 15–20 minutes, flipping once halfway.
  • Campfire: Place near hot coals and cook for 18–25 minutes, checking carefully.

    Open carefully (watch out for steam!), and serve directly from the foil or transfer to a plate. Spoon any juices over the top for extra flavor.
