Roasted Parmesan Zucchini (Quick & Crispy!)

Golden, cheesy, and irresistibly tender—these roasted zucchini rounds are topped with Parmesan and baked to perfection. Ready in under 15 minutes!

Ingredients:

  • 2 medium zucchinis, sliced into ½-inch rounds
  • 2 tbsp olive oil
  • ½ tsp garlic powder
  • Salt & black pepper, to taste
  • ½ cup grated Parmesan cheese
  • Optional: chopped parsley or red pepper flakes for garnish

Instructions:

  1. Preheat Oven:
    Set oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Season Zucchini:
    In a bowl, toss zucchini rounds with olive oil, garlic powder, salt, and pepper.
  3. Arrange & Top:
    Lay the zucchini in a single layer on the baking sheet. Generously sprinkle Parmesan on top of each slice.
  4. Bake:
    Roast for 10–12 minutes, or until the zucchini is tender and the Parmesan is golden and crisp.
  5. Serve:
    Garnish with fresh parsley or a pinch of chili flakes. Serve immediately as a snack, side, or healthy appetizer.
