Cheesy Baked Asparagus

Tender roasted asparagus spears topped with melted mozzarella and Parmesan — crispy, cheesy, and totally irresistible! Perfect for holidays, weeknight dinners, or brunch spreads.

Ingredients:

  • 1 bunch fresh asparagus, trimmed (about 1 lb / 450g)
  • 1 tbsp olive oil
  • Salt & pepper to taste
  • ½ tsp garlic powder
  • 1 cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • Optional: red pepper flakes or Italian seasoning for extra flavor
  • Fresh parsley (for garnish)

Instructions:

  1. Preheat Oven:
    Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
  2. Prep the Asparagus:
    Place the trimmed asparagus on the baking sheet. Drizzle with olive oil, then sprinkle with salt, pepper, and garlic powder. Toss to coat evenly.
  3. Add Cheese:
    Spread the asparagus into a single layer. Sprinkle the shredded mozzarella evenly over the top, followed by the Parmesan. If using, add a pinch of red pepper flakes or Italian seasoning.                                                 
  4. Bake:
    Bake for 12–15 minutes, or until the asparagus is tender and the cheese is melted and golden.
  5. Garnish & Serve:
    Top with chopped parsley and serve hot. Great with chicken, steak, pasta, or on its own!
