Japanese Fried Chicken (Karaage Style)

Crispy, juicy, and bursting with umami — this Japanese-style fried chicken is marinated in soy, ginger, and garlic, then fried to golden perfection. A crowd-pleasing favorite that’s perfect as a snack, appetizer, or main dish!

Ingredients:

For the Chicken:

  • 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
  • 3 tbsp soy sauce
  • 2 tbsp sake (or dry white wine)
  • 1 tbsp grated ginger
  • 2 cloves garlic, minced
  • 1 tsp sesame oil
  • Salt & pepper to taste

For Coating & Frying:

  • ½ cup potato starch (or cornstarch)
  • Oil for frying (vegetable or canola)

For Serving (optional):

  • Lemon wedges
  • Japanese mayo
  • Chopped scallions

Instructions:

1️ Marinate the Chicken:

In a bowl, combine soy sauce, sake, ginger, garlic, sesame oil, salt, and pepper. Add the chicken pieces, toss to coat, and marinate for at least 30 minutes (or up to 2 hours in the fridge).

2️ Coat the Chicken:

Remove chicken from marinade and pat dry. Dredge each piece in potato starch until well coated — this gives it that signature light, crisp texture.

3️ Fry:

Heat oil in a deep skillet or pan to 350°F (175°C). Fry the chicken in batches for 3–4 minutes, turning occasionally, until golden brown and crispy. Don’t overcrowd the pan!

4️ Drain & Serve:

Place fried chicken on a paper towel–lined plate to drain. Serve hot with lemon wedges and a side of mayo if desired.
