Ingredients:

Instructions:
1️⃣ Marinate the Chicken:
In a large bowl, whisk together olive oil, vinegar, lemon juice, garlic, oregano, salt, pepper, and paprika. Add the chicken and toss to coat. Cover and refrigerate for at least 1 hour, or overnight for deeper flavor.
2️⃣ Grill the Chicken:
Preheat a grill or grill pan over medium-high heat. Cook chicken 6–7 minutes per side, until nicely charred and fully cooked (internal temp: 165°F). Let rest, then slice into thin strips.
3️⃣ Make the Tzatziki:
In a bowl, mix Greek yogurt, cucumber, red onion, parsley, dill (if using), and salt & pepper. Chill until ready to serve.
4️⃣ Warm the Pita:
Heat pita breads on the grill or in a dry pan for about 1 minute per side.
5️⃣ Assemble the Gyros:
Layer sliced chicken down the center of each pita. Top with tzatziki, and extra cucumber, red onion, and parsley if desired. Roll and serve warm!
