Greek Chicken Gyros

Tender marinated chicken, creamy tzatziki, and fresh herbs all wrapped in warm pita — this Greek street food classic is bursting with Mediterranean flavor and perfect for any day of the week!

Ingredients:

For the Chicken Marinade:

  • 2 lbs boneless, skinless chicken thighs
  • 1/4 cup olive oil
  • 3 tbsp red wine vinegar
  • 2 tbsp lemon juice
  • 4 cloves garlic, minced
  • 1 tbsp dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika

For the Tzatziki Sauce:

  • 1 cup Greek yogurt
  • 1 cup cucumber, diced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • 1/2 tsp dill (optional)
  • Salt & pepper, to taste

For Assembly:

  • 8 pita breads
  • Extra cucumber, red onion, parsley (optional)

Instructions:

1️ Marinate the Chicken:
In a large bowl, whisk together olive oil, vinegar, lemon juice, garlic, oregano, salt, pepper, and paprika. Add the chicken and toss to coat. Cover and refrigerate for at least 1 hour, or overnight for deeper flavor.

2️ Grill the Chicken:
Preheat a grill or grill pan over medium-high heat. Cook chicken 6–7 minutes per side, until nicely charred and fully cooked (internal temp: 165°F). Let rest, then slice into thin strips.

3️ Make the Tzatziki:
In a bowl, mix Greek yogurt, cucumber, red onion, parsley, dill (if using), and salt & pepper. Chill until ready to serve.

4️ Warm the Pita:
Heat pita breads on the grill or in a dry pan for about 1 minute per side.

5️ Assemble the Gyros:
Layer sliced chicken down the center of each pita. Top with tzatziki, and extra cucumber, red onion, and parsley if desired. Roll and serve warm!
