Ingredients

For the Steak Marinade:

  • 1 lb flank steak (or sirloin), thinly sliced against the grain
  • 2 tbsp soy sauce
  • 1 tbsp cornstarch
  • 1 tbsp rice vinegar
  • ½ tsp black pepper
  • ½ tsp salt

For the Stir-Fry:

  • 1 large onion, thinly sliced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 2 cloves garlic, minced
  • 1-inch piece of ginger, minced (optional)

For the Sauce:

  • ¼ cup soy sauce
  • ¼ cup oyster sauce
  • 2 tbsp hoisin sauce
  • 1 tbsp rice vinegar
  • 2 tbsp water
  • 1 tbsp sugar
  • 1 tsp sesame oil
  • ½ tsp black pepper
  • ¼ tsp red pepper flakes (optional)

For Cooking and Serving:

  • 2–3 tbsp vegetable oil
  • Cooked white or brown rice
  • Chopped green onions (for garnish)

Instructions

  1. Marinate the Steak:
    In a bowl, combine steak with soy sauce, cornstarch, rice vinegar, black pepper, and salt. Toss and let sit for 10–15 minutes.
  2. Prepare the Sauce:
    In a separate bowl, whisk all sauce ingredients together. Set aside.
  3. Sear the Steak:
    Heat 1–2 tbsp vegetable oil in a wok or large skillet over high heat. Add steak in a single layer (cook in batches if needed). Sear for 2–3 minutes until browned. Remove and set aside.
  4. Stir-Fry the Vegetables:
    Add another tbsp of oil to the pan. Stir-fry onions, bell peppers, garlic, and ginger for 3–4 minutes until tender-crisp.
  5. Combine & Simmer:
    Return steak to the pan. Pour in the sauce and stir well to coat. Simmer for 2–3 minutes until sauce thickens and everything is heated through.
